It is quite possible to move away from the traditional
3 tier wedding cake to a design which means something special to you.
Any good baker or confectioner will have books on cake designs and
ideas and wedding cake decoration.
If you want to move further away from tradition why not try a profiterole
mountain, or fairy cakes for a fun option. If you still want to "cut
the cake" for good luck, then try orange. lemon, carrot or coffee
cake as an alternative.

Wedding Cakes
Kathleen Hacket
Synopsis:
A wedding cake is likely the most
memorable dessert you will ever serve, the piece de resistance
at the reception. Choose it with care, and with guidance from
the experts at Victoria. They and the many breathtaking photos
in this luscious, elegant guide, will help you find inspiration
and come up with innovative ways to make the cake fit snugly
into the wedding's overall theme. Once limited to three tiers
set on columns, decorated in white, embellished with piped sugar
frosting, and topped with a miniature bride and groom, this
confection now makes vivid style statements. For example, some
bakers will create a cake to match the colour, texture, and
details of the gown, even mimicking its buttons, bows, ruffles
and pleats. Or, the cake's shape and structure might mirror
that of the wedding's locale - echoing the decor of a fancy
hotel room or imitating the greenery and flora at an outdoors
reception. "Sweet detail" boxes throughout provide
invaluable tips, and there's a glossary of basic cake terminology.
From finding a baker to deciding on the right size to cutting
etiquette, all the information you need is contained in these
pages.

Sugar
Roses for Cakes
Tombi Peck, Alan Dunn, Tony Warren
Synopsis:
Known as the flower of romance, the
rose is the most popular of flowers. Indeed, roses are also
the most requested flower by brides to decorate wedding cakes
and to carry in bouquets. Sugar Roses includes a collection
of all the kinds of roses - wild, climber, rambler, old species
and the various modern roses - from pretty, delicate, five-petalled
wild roses to the huge full blown modern blooms. Grouped in
these sections in the book, with every colour imaginable, the
authors have displayed the roses in traditional and modern settings
on cakes and in bouquets, sprays, posies and table arrangements.
There are beautiful celebration cakes, including a spectacular
array of wedding designs. The amazing bouquets and arrangements
can be treasured as keepsakes. Following the latest trends in
flower arranging, there are many innovative ways shown to display
roses on cakes and as arrangements. To ensure success, each
rose has a clear step by step build up photography. In some
of the displays, other flowers, before been published, such
as dog-toothed violets, gymea lilies, sea holly and white ginger,
have been included to enhance the roses: these flowers will
also have a build up photograph. (As many sugarcrafters will
already have instructions for some of the roses, this will be
a good feature to promote.) The fabulous new book of floral
sugarcraft has been designed to compliment the true beauty of
the rose.
